# Beef Offals

The Wagyu Offal’s include a high concentration of nutrients and cherished flavors unlike muscles. Historically Offal’s were reserved for royalty. In other parts of the world, Offal’s are esteemed and are common menu features. In America, we’ve lost the art of preparing and enjoying the unique qualities of Offal’s. Our definition of Offal’s includes: head, brains, tongue, cheek, oxtail, liver, heart, kidneys, tripe, thymus (sweetbreads), bones, fat.
